Chicken & Rice recipe

Here is an easy dinner recipe for the whole family.


1 tbsp olive oil

6-8 chicken thighs/ drumsticks

1 cup brown rice ( or rice of choice)

1/2 packet brown onion soup ( You can use the whole packet but i half it to reduce the sodium)

1 small onion, chopped

5-6 mushrooms, thinly sliced


  1. Preheat oven to 180 degrees

  2. Heat pan on the stove and add olive oil.

  3. Cook chicken breasts and thighs until lightly browned and then remove from heat

  4. Add uncooked rice to a rectangle casserole dish and spread out evenly on the base

  5. Sprinkle onions and mushrooms over the rice

  6. Place chicken thighs and drumsticks on top of the rice

  7. Boil kettle and add 350 mls of hot water to half a packet of brown onion soup and mix

  8. Pour the mixed soup powder over the mixture so all the rice is covered with liquid

  9. Cook for 1 hour or until the liquid has boiled away and chicken is cooked.
