Cauliflower Rice

I love food and so I am always experimenting with new recipes and constantly looking for new ideas to try out in the kitchen. Whilst travelling (one of my other passions in life) at the end of last year, my husband and I stayed with a friend of mine who served us a wonderful dinner of salmon with cauliflower and broccoli rice. The rice was delicious and an interesting and unique way of incorporating vegetables into meal plans to achieve our "5 a day".


I decided to give it a go for our dinner tonight .The recipe is pretty simple. Just take one head of broccoli and cauliflower and chop out the cores from them. I only used about half of the whole head of broccoli as it was alot bigger than the cauliflower head. Then finely chop the cauliflower and broccoli into florets. Once finely chopped add the florets into a food processor and just pulse for a short period of time until the texture of rice or couscous. Be careful not to pulse for too long as it can go mushy.


I then added the mixture into a frying pan and dry fried it for couple of minutes. I added black pepper for flavour at the end and it was delicious. I did have a few issues with my food processor and so you can see from my picture it wasn't as finely chopped up as it should be but nonetheless it still had great flavour. You can serve it as your vegetable portion at any meal.
