Cabbage mince and quinoa

An easy recipe using staples



At the beginning of the year, one always feels motivated to try new things and experiment a bit more. I has some mince in the freezer and some leftover cabbage from a salad I made the previous day and so goggled a few options for recipes and then using those made up my own version for the recipe below.

This recipe made 4 portions I found this meal quite light and very tasty.

Ingredients 350g lean beef mince 1 tablespoon oregano 1 tablespoon basil 1 tablespoon garlic, chopped 1 tsp cumin 1 tsp curry powder 2 onions, finely chopped 1 carrots, grated 1 small cabbage head, shredded finely 1 cup quinoa, uncooked Salt and pepper for tasting

Method: 1.    Brown the mince in a frying pan on the stove. Add the herbs and spices for seasoning to the mince as well as the garlic. 2.    Whilst mince is cooking, bring 2 cups of water to the boil in a pot on the stove. Once water is boiling, add the  1 cup of   quinoa. Reduce the heat to allow the quinoa to simmer and then cover. Cook for about 15 minutes or until all the water has absorbed. 3.    When the mince is brown, add the chopped onions and grated to the mix and stir well 4.    Once onions and carrots have softened, add the cabbage and mix in well. 5.    Add salt and pepper to one's desired liking 6.    Serve the cabbage mince with quinoa

Other suggestions included adding salsa or sour cream with the dish however I found it quite tasty on its own
