I have always seen recipes for a chicken and mango salad online but never made one and when I popped into food lovers this week, they was a special for R25 so I thought I would give it a try. This amount fed my husband and I for dinner and I still had leftovers for work the next day.
Ingredients 2 chicken fillets, cut into strips 1 tablespoon olive oil 1 tabelsoppn soya sauce 1 tablespoon lemon juice 1 tablespoon sesame seeds Lettuce or salad green 1/2 red onion, chopped 2 celery sticks, chopped 2 small mangos, diced 1 round feta cheese ½ tin chickpeas 1 tablespoon soya sauce
Method: 1. Mix the olive oil, soya sauce, lemon juice and sesame seeds together 2. Place the chicken strips into the mixture and allow for marinade for 10-15 minutes 3. Add salad greens, red onion, celery sticks, mangos, feta cheese and chickpeas together 4. Heat the grill plan and grill the chicken until cooked 5. Place chicken with salad mixture and top with sesame seeds and soya sauce.
